Video Settings & Compression

I recently made this short video using a Kodak zi8.  I have been constantly trying to find the best setting for use on the web - we have the capability to host our own videos.  This one is in QT, at h.264, 720p and a bit rate of 8,000.  The file size is 23 MB.

As you start adding audio and music the file sizes get so big.  (either wmv or qt).  I have also tried FLV, but the quality does not always seem to be there.  Where can I go to find up-to-date thoughts on these types of settings or any ideas from the experts on this forum would be appreicated.  I guess what I don't really understand is the concept (or method) of compressing the files - if that is indeed the right term.
